Pukis..pukis...

I've been looking for awhile for perfect recipe of this Indonesia traditional cake.
Every time i went back to Indonesia,i would search for this cake,from cake shops to hawkers i'd hunt for it,bough dozens of them and gobble them up like there's no tomorrow.....:))

Last time i went back to Indonesia,i bough the Pukis mold with the intention to make them at least once a month,alas i had few bad experience with so many pukis recipes i had tried either from cookbook or from Internet that sort of put me off making them.This morning I googled recipe and i came across pukis recipe from Budi Sutomo website whom is a famous chef in Indonesia...,so once again i will myself to get the mould out from it's hiding place into the stove...
and i have to say I'm quite happy with the result,the cake is soft,moist and taste like it supposed to..



Here is the recipe:

200gr plain flour
4 eggs
125gr Castor sugar ( add 50 gr extra if you have sweet tooth)
200ml coconut milk
10gr instant yeast
1/2 tsp vanilla flavour
1/2 tsp salt
40gr butter/margarine,melted

chocolate sprinkle or cheddar cheese for garnish

  1. In the bowl mixed eggs,sugar and salt until all rise
  2. pour plain flour,melted butter,instant yeast and vanilla mix with wooden spoon
  3. pour coconut milk slowly,leave the batter for at least 1 hour until they double in size and sort of bubbling.
  4. Heat pukis mould,turn the heat to low,pour the batter about 3/4 high
  5. when they are half done,sprinkler either with choc or cheese
  6. cook until batter turn light brown on the side....
Enjoy them with coffee in the afternoon....bliss..........
