Every time i went back to Indonesia,i would search for this cake,from cake shops to hawkers i'd hunt for it,bough dozens of them and gobble them up like there's no tomorrow.....:))
Last time i went back to Indonesia,i bough the Pukis mold with the intention to make them at least once a month,alas i had few bad experience with so many pukis recipes i had tried either from cookbook or from Internet that sort of put me off making them.This morning I googled recipe and i came across pukis recipe from Budi Sutomo website whom is a famous chef in Indonesia...,so once again i will myself to get the mould out from it's hiding place into the stove...
and i have to say I'm quite happy with the result,the cake is soft,moist and taste like it supposed to..
Here is the recipe:
200gr plain flour
4 eggs
125gr Castor sugar ( add 50 gr extra if you have sweet tooth)
200ml coconut milk
10gr instant yeast
1/2 tsp vanilla flavour
1/2 tsp salt
40gr butter/margarine,melted
chocolate sprinkle or cheddar cheese for garnish
- In the bowl mixed eggs,sugar and salt until all rise
- pour plain flour,melted butter,instant yeast and vanilla mix with wooden spoon
- pour coconut milk slowly,leave the batter for at least 1 hour until they double in size and sort of bubbling.
- Heat pukis mould,turn the heat to low,pour the batter about 3/4 high
- when they are half done,sprinkler either with choc or cheese
- cook until batter turn light brown on the side....
